Pumpkin Spice Waffles

There is nothing like gathering around the table on a nice fall morning right before church and soaking in the sights and scents of Fall. Especially the one coming from Mama’s kitchen. Hey Y’all! What’s on the menu for today?……

Pumpkin Spice Waffles


  • Prep time: 20 mins.
  • Cook time: 6-7 mins.



1/2 cup coconut oil
1/2 cup sugar
1/2 cup brown sugar, packed
15 ounces pure pumpkin puree
2 eggs (separated)
1/2 cup whole milk
1 tsp Pumpkin Pie Spice Extract*
1 tsp vanilla
1 1/2 cups all purpose flour
1 tablespoon baking powder
1/2 tsp salt

For something extra add 1/2 cup finely chopped pecans


Preheat waffle iron according to directions.
In a large bowl, whisk the coconut oil (in liquid form), both kinds of sugar, pumpkin puree, egg yolks, and milk together until smooth.
Add the pumpkin pie spice extract and vanilla extract and stir.
In a separate bowl mix the flour, baking powder, and salt together.
Stir the flour mixture into the pumpkin mixture, just until combined.
In the bowl of an electric mixer, whisk egg whites until they are white and fluffy with soft peaks.
Very gently fold the egg whites into the batter.
Scoop about 3/4 cup of batter onto the waffle iron and cook , Batter will be thick consistency. Top with butter, syrup, whipped cream, and/or cinnamon if desired.


Alternative to Pumpkin spice extract in case you need it:

2 tsp cinnamon
1/4 tsp ground cloves
1/4 tsp nutmeg

1. Environmental

Obviously, anything we reuse is going to help our carbon footprints stay miniscule. Let’s face it, we need all the help we can get with keeping our earth up for our kids and their generations to come.

2. Savings

Have you been to a Goodwill lately? They literally sell everything at flat prices. Tops $2-$3. pants and jeans $4-$5. Outdoor wear $5-$6. Shoes $4-$8. I am not aware of any other retailer you can walk in and get those prices.

3. Selection

There is a good chance you will come across an item you wanted last season directly from retailer that was just to pricey to buy, so you never got what you actually wanted. It’s likely to be for sale pre-owned.

4. Designer

Now you have to be a regular shopper and know the days a thrift store such as goodwill puts out there newer inventory because designer name brands go fast!
But they are there all the time, I have even purchased Tory Burch brands, Lilly Pulitzer for less than $15 on Poshmark or ebay.

5.Brand New

Stores like Macy’s, Loft, Ann Taylor, Target donate on a regular basis to Goodwill. They are usually returned items or last season that didn’t sale. They are still mint condition with tags attached. No one is going to know if it came from goodwill or Macys. why not get it for 90% less the retail value.
